Great Wine Starts In The Vineyard

Winemaking Philosophy

Our home vineyard, Tallavera Grove, has been providing fruit for trophy winning wines for some of the Hunter’s most successful wineries over the past 20 years. In the year 2000, the decision was taken to select certain parcels of fruit from Tallavera Grove and the Davis Family’s other vineyards in Orange (Carillion) and Wrattonbully (Stonefields) to craft wines that are a true expression of their locations. To reflect that sense of terroir, it only made sense to name our wines respectively by their vineyard of provenance and make them available in limited quantities to our own customers. At first these wines were only available through certain select restaurants around the state until our Cellar Door at the vineyard was completed in 2002, providing the perfect location for everyone to try and buy the full range of wines.

With all wines made in small batches under the direction of vigneron Tim Davis in small batch quantities, we are able to offer a range of wines from grapes grown in the areas best suited to particular varieties. This allows us at Tallavera Grove to provide the highest possible wine quality across our whole range of wines including Chardonnay, Semillon, Verdelho, Merlot, Shiraz and Cabernet Sauvignon.

Exciting Italian varieties such as Vermentino, Verduzzo, Sagrantino and Aglianico have flourished in our vineyards, consistently providing the basis for exciting varietal wines of great individual character. These wines are currently produced in quantities as small as 300 bottles and mostly only available through our Cellar Door or Wine Club.

Our winemaking philosophy focuses on creating the very best expressions of each variety in each vineyard with the most minimal of intervention from the winemaker. As we have access to some of the most modern winemaking technology we generally utilise a combination of modern as well as traditional winemaking techniques, such as basket pressing and wild yeast fermentation on several wines. Being from select limited parcels, we generally only produce small batches of around 150 – 250 cases of each of our wines per year, and some even as few as 250 bottles.

From the careful selection of our vineyard sites more than 20 years ago, and the planting of varieties and clones that take full advantage of the soil and climate, to the judicious management of these blocks in the years since then, we are able to ensure that we consistently deliver the best fruit possible to the winery every year.
